Pea Shoots and Strawberry Salad with Balsamic Reduction 

2/3 cups Balsamic Vinegar
2 teaspoons Honey
1/2 pound Strawberries
4 ounces Pea Shoots 
½ Cucumber

1. Pour the balsamic vinegar and honey into a small saucepan.   Place over a low heat and reduce until ½ its original volume. Allow to cool for 15 minutes.  
2. Peel and thinly slice the cucumber.  De-hull the strawberries and slice thinly.
3. Place the pea shoots in a salad bowl with the cucumber and strawberries then lightly season with salt and pepper.  Drizzle with the balsamic reduction just before serving.
