Arugula and Mushroom Pizza

1 tbsp. olive oil
1 red onion, peeled, thinly sliced
1 (6 oz pkg) fresh mushrooms, sliced
1 lb pizza dough, thawed (Trader Joe's have great pizza dough)
1/3 cup roasted garlic sauce
1/2 tsp. Italian seasoning, dried
1 (8 oz pkg) part-skim mozzarella cheese, thinly sliced
8 thin slice smoked deli ham, chopped
1-1/2 cups arugula
1/4 cup Parmesan cheese

1. Heat oven to 400°F.
2. In a large skillet over medium-high heat, cook oil, add red onions and mushrooms, cook 2 minutes or until tender. On a lightly floured surface, using a rolling pin, roll out dough to 12-inch round. Transfer dough to baking sheet.

Spread garlic pasta sauce evenly over dough. Leave a 1/2-inch border. Sprinkle dried Italian seasoning evenly over sauce.

Top with sliced mozzarella, red onions, mushrooms and ham.

Bake 15 minutes or until golden brown. Sprinkle with baby arugula and Parmesan cheese.
